Christmas Pudding

Ingredients for the Pudding

  • 2 cups of chopped suet
  • 1 cups of raisins
  • 1 cup of dried cranberries
  • 2 cups of corn syrup
  • 2 cups water
  • 1 tablespoon of sea salt
  • 1 teaspoon of nutmeg
  • 2 teaspoons of ground cinnamon
  • ½ teaspoon of ground cloves
  • 2 teaspoons of baking powder
  • 6 cups of all-purpose unbleached flour

Ingredients for Sauce

  • 4 cups of milk
  • 2 tablespoons of butter
  • 1 cup of sugar
  • 1 cup of vanilla sugar
  • ¼ cup of cornstarch
  • 1 teaspoon of pure vanilla extract
  • 1 teaspoon of sherry or brandy
  • 1 teaspoon of sea salt

Directions

  • In a bowl combine suet, raisins, cranberries, corn  syrup, baking soda, nutmeg, cinnamon, cloves, flour, baking powder, and 1 tablespoon of sea salt
  • Mix until all is combined well
  • Heat in a steamer over about 1 inch of hot water making sure that the water does not boil
  • Cook until a toothpick comes out clean
  • In a saucepan over medium heat combine the ingredients except for the vanilla and sherry or brandy  for the sauces
  • Stir constantly until the sauce thickens
  • Mix in the vanilla an sherry of brandy

A fun thing to do, if you are old enough to do so, is to brush with the pudding with sherry or brandy and serve it a flambé.  Be careful when you do this though as the pudding will ignite due to the alcohol.  It is fun to watch though.  Also, decorating the pudding with a sprig of fake holly is cute like the one above.  Just make sure that the holly is fake because real holly is actually toxic and can make you extremely sick and kill household pets!
